Guacamole Hummus plus Popchips & Jillian Michaels DVD Giveaway! (Closed)

Hello Darlings!

So, I know Cinco de Mayo is ages away and guacamole isn’t generally a winter-time treat, but when the lovely folks at Popchips sent over a ‘chipment’ of flavors to try I fell in love with their Salsa Tortilla Chips. Yep, you read that right, salsa-flavored-tortilla-chips. Yes, please! The salsa chips were one of many delicious flavors that Popchips had sent over, and I genuinely loved all of them. Which, generally speaking, is a bad thing when it comes to snack food, but with Popchips I can snack guilt free!



Made with real vegan ingredients, no preservatives, no saturated fat, and like it says on the label “no dirty secrets” you can feel safe munching on Popchips while actually being able to read the ingredients list! And while you’re crunching away why not top those deliciously popped chips (no baking or frying here!) with some Guacamole Hummus- a dip that is the best of both worlds!


Guacamole Hummus Ingredients:

- 1 Can Chickpeas, Rinsed Well
- 2 Ripe Avocados, Roughly Chopped
- ½ Cup Chopped Tomato, Deseeded
- ½ Cup Chopped Onion
- 2 Tablespoons Dried Cilantro Leaves (Fresh also works!)
- 1 Tablespoon Lime Juice
- 2 Cloves Garlic, Minced
- 1 Teaspoon Cumin
- Salt and Pepper to Taste (I used a teaspoon of each)


Instructions:

1. Add chickpeas, onion, garlic, and cilantro to a food processor. Process until roughly chopped.


2. Add avocado, tomato, lime juice, cumin, and salt and pepper to the chickpea blend, process until smooth.


3. Serve with your favorite Popchips- this is perfect for Popchips Salsa Tortilla Chips!

Well, that was simple, but chock full of flavor- just like Popchips! I love that Popchips offer the crunch lots of us crave in a snack food, but without the greasy, heavy ingredients that often makes that happen. Instead of baking the chips, which sometimes can loose that ‘chip-y’ flavor, or frying with fattening oil, Popchips are popped with a bit of pressure that allows the potato, corn, popcorn, or veggie chips to be light and crunchy.


I am not the only one who touts her love for Popchips, I’m fairly certain that you have heard of Jillian Michaels, personal trainer extraordinaire! I know that if she were my trainer I would be equal parts terrified and exhilarated, but that she would kick my butt in such a wonderful way. Jillian is a Popchips spokesperson and investor, meaning that she doesn’t just stick her pretty face on advertising- she’s backing them financially because she believes in the company that much! When you have a snack food that is praised by a women who makes her life about getting people fit and healthy you really can’t go wrong!
