Now I am the first to admit I am not a huge fan of the taste of coconut. I use coconut oil constantly and love to rehydrate with coconut water (pineapple flavored please!) but I’ve always shied away from using actual coconut flakes. However I attended an event at Natural Grocers recently and walked away with a goodie bag filled with bulk foods including a giant bag of coconut flakes that I had no idea what to do with. Enter the Superfoods for Life, Coconut cookbook by Megan Roosevelt, R.D. L.D.
The second book in the Superfoods for Life series (check out my Superfoods for Life, Chia review) the coconut title is a wonderful resource for recipes and incredible information about the benefits, uses, and components of nutrition that coconut offers! I’ve been working my way through the amazing recipes in the books (and being really, really, terrible at taking pictures: note the half-eaten oatmeal!) and have loved everything so far!
My first must-do was making my own coconut milk to use in many of the other recipes in the book! It was super simple and helped make some of the other recipes amazing!
In my mind you really cannot go wrong with oatmeal. But when an oatmeal dish is great, it is AMAZING. This Oatmeal with Flax Seeds, Cinnamon, and Coconut Milk was just that! With just a few ingredients you whip up a super healthy, incredibly delicious breakfast that keeps you full of energy!
One of my favorite things about these Superfoods for Life books is that they include recipes for non-food products. I’ve been loving the Blemish Control Moisturizer before bed each night. Colorado wrecks havoc on my skin, breaking me out and drying out my skin (not fair to have both!) and the coconut oil and tea tree oil moisturizer is working wonders!
Each recipe is wonderfully complimented by really specific but easy to understand information about how the coconut (and other ingredients) will help your body. From metabolism boosting to moisturizing properties, Megan Roosevelt explains it all in Superfoods for Life, Coconut!
