Hello Darlings!
I have been beyond exhausted lately. While I love what I’m
doing, I definitely have a lot on my plate. So I’ve been trying everything in
order to maintain my generally chipper self! Eating clean, (attempting) to get
to bed before one, and adding bladderwrack to my diet to help boost my thyroid,
(thyroid problems run in my family, another cause of exhaustion), have all
helped a bit but sometimes I felt like I just needed a coffee. Wanting coffee
is incredibly strange for me- generally I’m a tea person, caffeine and I just
don’t get along.
And then my roomate-to-be at Blend Retreat next month (yay!) Madelyn from Moon Fitness
saved the day. She works for this wonderful small company based in Boulder,
Skoop. A superfood blend of 41 non-GMO, gluten-free, organic ingredients, chock
full of antioxidants, probiotics, and adaptogenic herbs that help reduce
inflammation, Skoop was an instant, natural energy boost that stayed steady

I normally start out my summer breakfasts with a smoothie full of frozen berries, almond milk, and spinach (or recently, one of these paleo smoothies) and I’ve been adding Skoop for a kick of healthy energy and greens to amp up the nutrition factor. I love that the Sweetgreens ‘flavor’ is full of awesome grasses like wheatgrass as well as veggies like kale and yet doesn’t taste like weeds!
For lunch I’ve been pre-packing mason jars full of a chopped
salad of sorts. I love that I can just grab a jar on my way out the door and
don’t have to worry about finding something healthy between teaching yoga
classes! This week’s jars start with olive oil and balsamic, then carrots,
pickled beets, cucumber, olives, and red cabbage. All you need to do is give
the jar a shake and you have dressing without everything being soggy!
For an afternoon pick-me-up between classes I mixed almond
milk with the Chocofresh flavor of Skoop. Generally speaking I am not a
chocolate person (blasphemy, I know) but I have been LOVING this chocolate
supergreens mix! It takes like real chocolate instead of the odd powdered stuff
that so often flavor mixes like chocolate protein powder!
I had quite a bit of leftover pineapple-avocado relish from
my Honey-Lime Chicken, so for dinner I whipped up some more of the chicken and
added my leftover relish- just as yummy as the first time!
And because I am apparently incredibly obsessed with Skoop,
for dessert I had frozen my leftover smoothie (I almost always make either a
batch and a half or a double batch so I can save for dessert). Super sweet
without being overwhelmingly so, the sweetgreens added an extra level of flavor
for my frozen treat!
