Hello Darlings!
This year is my first year in Denver that I have a DUG (Denver Urban Garden) plot with a good friend of mine I met through teaching yoga! I have missed gardening SO very much, so sticking my hands in the soil and being able to bring home fresh greenery makes me so happy! I realized this week that so much of my food was fresh or came from local businesses and it is always fun to celebrate and support your local economy!

Weekly Snack Attack
Hello Darlings!
If you you’ve been following my WIAWs for a while, you might have noticed that 1. I am really bad about them getting posted on Wednesdays and 2. I am pretty bad at capturing a single day’s worth of food. However, I am a big fan of photographing my snacks! Which, quite frankly, are often a bit more fun anyway!
So, without further ado: Snacktime!

When it comes to food I want things to taste good, look
great, (usually) be healthy, and be fun to eat! With being super busy with my
new business on top of my regular schedule of activities :: said like an event
announcer :: I have been trying to save time in any way possible. One timesaving
idea was to check out one of the cook-your-own-meals subscription boxes,
however I had always been a bit wary because of the incredible amount of waste
that their packaging produced.

What I Ate Wednesday: Instagram Edition
Hello Darlings!
If you’re anything like me when life starts to get a bit busy, stressful, and messy healthy food is the first thing to go. (You mean I have 12 hours of work today and you want me to COOK?) Which I know that this isn’t a particularly great habit of mine, but something sh*t happens. These past couple of months have been a whirlwind for me, so I’ve been making a point to eat as healthily as I can while running around for meetings and tea.
One of the great things about being in the wellness industry is that the places we pick for meetings to take place tend to be on the healthy side! So, in true blogger fashion, I thought I’d share some of my favorite Instagram snaps (shameless plug to go follow me there!) of the healthy food I’ve been eating lately for WIAW!

What I Ate Wednesday: Getting Back on Track
Hello Darlings!
This past holiday season I was on the See-Food diet. If I saw it, I ate it- which led to a body that didn’t feel so great. I am all about the occasional splurge; I’ve been known to pack a beautiful salad for lunch, followed by baked chicken and veggies for dinner and then the next night house half a pizza, and for me that’s okay. However after all of my holiday splurging my body felt run down and heavy. Not in the ‘I gained weight’ way but the ‘I constantly put crap into my body and can feel it way’. So, this WIAW is all about getting back on track, and feeling healthy and whole in my body once again.

What I Ate Wednesday: Healthy While Eating Out
Hello Darlings!
I’ve been a bit bad (good?) lately about eating out. Spending time with friends while enjoying Colorado’s gorgeous autumn weather has been wonderful. I’ve been up to Boulder and out in my own neighborhood, but I noticed while going though my over-full phone (#bloggerproblems) that while I’ve been eating out I’ve been keeping it healthy- yay!

What I Ate Wednesday: California Tripping
Hello Darlings!
This past weekend I had a ball out in San Francisco and San Jose California with a couple of friends from my Boston College and high school days- both of which I hadn’t seen in ages! As it goes on pretty much any vacation, I ate really well. And while I could have been a bit better at snapping all of my meals, I have quite a few delicious pictures to show you- so I will let them speak for themselves.

What I Ate Wednesday: Blogger Perks
Hello Darlings!
I love being a blogger. Something that started out as just a
hobby after I received a DSLR for Christmas in 2012 has turned into (as cheesy
as it sounds) a way of life. I think the best part about blogging is the
community. I love hearing from readers (like you!) about what you like, what
you don’t like, things you want to see more of, and following along with your
lives! I have met some amazing people both online and off, and had the chance
to experience life in some pretty great places (::cough:: Blend Retreat
::cough::).

What I Ate Wednesday: Gone Fishy (and Outer Spice Giveaway)
Hello Darlings!
I’ve been on a seafood kick lately. From fish to prawns to sushi, I’ve been loving everything that comes from the ocean (seaweed included!) So I thought I’d share some of my favorites from this past week!
One of the ‘make-it-simple’ ingredients that has been my go-to this past month is the line of spice blends from Outer Spice. I have been insanely busy and barely have time to think, let alone create a spice blend for every meal I eat.

What I Ate Wednesday: Blend Edition

The first weekend in June I popped over to gorgeous Park City, Utah to attend the Blend Retreat! (Blend= blogger + friend) I absolutely adored getting to see some of my favorite blogging friends- some for the first time!
And while I’m planning on writing a full blown Blend recap, I thought it would be fun to share some of the food I snapped pics of this week! So, in no particular order: Food! For some reason (probably because I was entirely too excited!) I didn’t take food snaps on the first night so these start with day two!

What I Ate Wednesday: I’m Obsessed with Skoop (& Giveaway- Closed)
Hello Darlings!
I have been beyond exhausted lately. While I love what I’m
doing, I definitely have a lot on my plate. So I’ve been trying everything in
order to maintain my generally chipper self! Eating clean, (attempting) to get
to bed before one, and adding bladderwrack to my diet to help boost my thyroid,
(thyroid problems run in my family, another cause of exhaustion), have all
helped a bit but sometimes I felt like I just needed a coffee. Wanting coffee
is incredibly strange for me- generally I’m a tea person, caffeine and I just
don’t get along.
And then my roomate-to-be at Blend Retreat next month (yay!) Madelyn from Moon Fitness
saved the day. She works for this wonderful small company based in Boulder,

What I Ate Wednesday: I’m a Grazer
Hello Darlings!
So it has been what feels like forever since I’ve posted last! My life has been quite crazy partly do to the fact that I’m moving apartments! If anyone ever tells you that moving on your own (and without boxes) is a good idea- they are sorely mistaken. It is AWFUL- capital letters completely necessary. So, of course in true moving fashion my eating schedule and menu has been completely strange. Chinese takeout at 9pm because you can’t find any cooking utensils? Check. Strange picture quality because you have no idea where you put your DSLR? Double check.

What I Ate Wednesday: Saint Patrick’s Day
Hello Darlings!
I love holidays in general. Decorating the house, making plans, fun drinks, fun menus! But for some reason I don’t get incredibly excited about Saint Patrick’s Day anymore (in college it was another story!). However, I did celebrate the simultaneous Meatless Monday and Irish holiday with a very green vegetarian day of foods.

What I Ate Wednesday: Superbowl Weekend
Hello Darlings!
This post turned out entirely different that I had expected. I thought that it would be full of beer, burgers, and game time snack foods (like my Twice Baked Fingerling Potatoes). However, the cheat day I had envisioned didn’t come to fruition, which my waistline appreciates. I was getting certified in restorative yoga all weekend, and the times got changed which meant the training ran over a huge chunk of the game. By the time I was out and made my way over to a friend’s party, the Broncos were losing by an absurd number of points. So I stayed to watch the Seahawks win and promptly went home to bed.
However, being the good little blogger I am I did happen to take pictures of my meals during the training so I thought I’d share those instead! Sorry for the iPhone quality snaps!

What I Ate Wednesday: Prenatal Yoga Teacher Training
Hello Darlings!
This past weekend I got certified to teach yoga to prenatal
mothers, which I am so excited about- I have always been passionate about the
early stages of life! This weekend was step one in a full certification of 95
hours of additional training which will happen throughout the year. So add that
to the baby and me training, and the additional kids yoga trainings and I have
my hands full! Because trainings involve so much movement and asana I tend to
eat rather lightly as the training is going on so I don’t feel overfull or
heavy. I thought it would be fun to share what I brought in my silly little
lunch bag for one of the training days! P.S. please excuse the iPhone photos- it might have been a bit weird to lug a DSLR to training!

talking about making cookie dough, yep just cookie dough. To eat, not to bake.

What I Ate Wednesday: Meatless Monday Edition
Hello Darlings,
I call myself a ‘flexitarian’ that means that I eat a mostly
plant-based diet but throw meat into the mix just not every day. I thought it
might be fun to share a typical no-fuss Meatless Monday to show that having a
veggie day isn’t difficult, even if you are feeling lazy (I most definitely
was!) P.S. Sorry for the picture quality-they are mostly iPhone shots!
I started out my day with my usual hot water/lemon/apple
cider vinegar drink followed by a cup of tea. And then, to completely
counteract any warmth I built up after two hot drinks, I had a smoothie made of
organic frozen blueberries, blackberries, and raspberries, Silk Almond Milk,
Greek yogurt, and fresh baby spinach leaves.
For lunch I had the leftovers from my Shaved Asparagus Salad recipe I posted on Monday. (Total side note: asparagus is one of those words that for some reason I can never spell correctly on the first try. Frustrating.) The salad is just as good the next day- I love raw veggies!

What I Ate Wednesday: Holiday Cookie Party
Hello Darlings!
I love that the winter holiday season is all about getting
together with greats friends and family, having fun, and being thankful for our
loved ones! Last Saturday was a super fun day- I headed to the Park Meadows
mall for an event with Chex playing around with recipes for Chex Mix Party
mixes, then headed home to get ready for my fellow yoga teacher training girls
to come over for the night!
When I have a big day ahead of me, I am all about a healthy
breakfast! I love MixMyOwn.com, an awesome small business granola shop (review here) and I mixed my current custom mix of granola (that has bee pollen in
it-so cool!) with persimmon and Greek yogurt!
